On Saturday 10th September, 2022 Matt Crow and Glyn Ingram were delighted to join Marcus Bean for a lively conversation on the Let’s Talk Food Stage at this year’s BBC Good Food Festival at Goodwood. Marcus was fascinated by the seasonality of sustainable venison farming, the team’s support of local food producers and shop local focus, and delighted that Sky Park Farm are driving these important initiatives. 

Glyn elaborated on the importance of deer not only to the history of West Sussex and Hampshire, but also to the UK as a whole. He reinforced that whether farmed or wild, British venison provides a fantastic, sustainable and incredibly healthy meat, often with very limited food miles – and in Sky Park Farm’s case, zero travel miles!

Matt talked in detail about the versatility of venison for all palates – from burger to pie to carpaccio or delicate loin, all delicious and easy to prepare at home. He detailed the quality and breadth of the food offer available in The Grazing Rooms, from breakfast to lunch, as well as the monthly Tasting Evenings collaborating with some of the excellent local vineyards, such as Ashling Park, Hambledon and Nyetimber. 

For cooks and meat lovers, Matt also gave the audience a recipe card and explained how to cook The Grazing Rooms Rangers Pie, a stunning venison pie with a twist!
